roasting.

Antigua Iglesias This complex and aromatic gourmet coffee is grown high up in Antigua’s premier mountain growing area, where the beans ripen slowly. Its bright, smooth cup, enhanced by its chocolate note, can be mistaken for its Central American neighbor, Jamaica Blue Mountain coffee.
Sumatran Mandheling GR1 Natural milling slowly dries and hardens the ripe cherries, giving this coffee an earthy flavor with low acidity and an earthy herbal aroma. Due to Sumatra Mandheling’s syrupy body and low acidity it continues to be one of the more popular coffees. Ethiopian
Harrar Sun-dried
Harrar is one of the world's finest premium coffees. Grown at an
altitude of 2000 meters to 2750 meters, this longish bean with a
yellowy golden tinge has medium acidity, full body and an oh so
distinctive deep mocca flavor. Because it produces a foamy "tigretto"
type cream, Ethiopian coffee growers have begun touting it for espresso
coffee. Some also blend it, for the wild and fruity acidity it brings.
Harrar is produced in the Ethiopia's eastern highlands and exported
from the town of Dire Dawa.

More will become available as demand increases and will be added to the list. I am trying to purchase reasonably priced coffees but social consciousness does come at a cost. So far I have been able to offer all coffees in this category at only a $2 premium over the regular coffee. Colombian Fair Trade Organic This fine arabica, grown at high altitudes in Columbia's mountains, comes to us from one of the Third World's legendary organic organizations, Asociación de Producción y Mercadeo para la Educación, or ASPROME for short. In 1985, to counter their reliance on the coco crop and the drug trade, a group of small farmers in southeastern Colombia's Cauca region got together to set up this cooperative. Today, with the help of German NGOs, ASPROME has become an umbrella association for eleven smaller groups, all cultivating organic fruit. ASPROME then processes the fruit to make everything from coffee to jams, and fruit purees for sale abroad. Through ASPROME, 450 families now earn their living without resorting to coca and heroin.

Yirgacheffe Fair Trade Organic Ethiopia,
the legendary home of the coffee plant and Africa's largest exporter,
grows
remarkably varied and distinctive beans. One of the very finest comes
from the
Yirgacheffe region -- the only coffee allowed in the palaces of
Ethiopian
kings. Today, this bean, which grows in high elevations under a soft
canopy of
native shade trees, is developing an almost cult-like following among
bean
aficionados. Widely recognized as one of the world's most exquisite
coffees,
Yirgacheffe's fragrant and flowery citrus note sets it apart from any
other
bean you will encounter. Many compare its rich flavor to that of
burgundy
wines.
Papua
New Guinea Fair Trade Organic In
keeping with New Guineas tradition, this coffee is strictly
Organically grown, Fair Traded coffee. Also typically, Papua New
Guineas are of
very high quality and impeccably prepared green coffees. Peru Fair Trade Organic is grown in the mountain regions of northern Peru and possesses a rather intense and rich flavour that is less acidic than other blends. The 100% chemical free Swiss Water® decaffeination process ensures taste is preserved.
